Preparation:
1.
Heat water in a deep pan and boil the broccoli florets for about ten minutes (no salt). In a small pan, heat the rice vinegar, then add the miso paste and wisk to dissolve it. Now add the honey and let reduce for about ten minutes.
2.
Drain the broccoli and combine with the reduction, set aside. In a big bowl, stir up the Rösti with a fork, then add the eggs as well as the broccoli and liquid and mix well with a fork.
3.
Pour the entire mixture into a non-sticking frying pan without adding oil and let cook for about 20 minutes on low to medium heat, until there is almost no runny egg on top. With a rubber spatula, carefully lift and loosen the sides of the tortilla from time to time.
4.
Carefully flip over the pan over a plate and slide the tortilla back into the pan. Let cook for another five minutes, then turn it out on a serving dish or wooden board. Sprinkle with finely chopped chives.

Preparation:
1.
Cut the vegetables, herbs, peppers and mushrooms into small cubes, i.e.
chop finely. Add the raw Rösti, the eggs, the soy sauce and flour and combine well with a
fork, until you have kind of batter.
2.
Heat a non-sticking frying pan with some olive oil on medium to high heat. With wet
hands, form the patties (about the size of a golf ball) and carefully put them in the hot oil,
then softly press down with your hands.
3.
After five minutes, turn them around and let them finish for another five minutes,
until they are crispy and golden.
4.
For the Miso Mayonnaise, just dissolve a TS of red Miso paste in a TBS of water, whisk well
and mix in 4 TBS of Mayonnaise. Decorate with some finely chopped
red chilies. If you prepare this dish for kids, don’t use the chilies or take out the spicy.

Miso Mayonnaise
Preparation:
1.
Heat a non-sticking frying pan with some canola oil and fry bacon until slightly crispy.
2.
Loosen up the Rösti in the pack and add the raw Rösti to the frying pan with the bacon.
3.
Spread the shredded cheese over the Rösti. Let cook for five minutes on medium heat and gently break the Rösti apart from time to time with a spatula.
4.
Carefully flip over the pan over a plate and slide the Rösti back into the pan. Let cook for another five minutes on medium heat.
5.
Serve the bacon and cheese Rösti with lettuce and fried eggs.

Cook the Rösti according to instructions, meanwhile cut the tuna in cubes and set aside. Chop the coriander roughly. Cut the mango in cubes, mix it with the chopped coriander and set aside as well.

For the marinade chop the chili finely and empty the seeds. Grate in half of the lemon skin and juice. Mix together in a bowl with honey, roasted sesame seeds and soy sauce. Then add the Tuna

Chop the spring onion roughly mainly the green part and add to the bowl. Loosen up the Rösti in the pan and add some sesame oil to crisp it. put the Rösti into a bowl.
4.
On top of the bowl distribute the tuna mixture on one side of the bowl and the mango mixture on the other side. Decorate with herbs or edible flowers.

Cook the Rösti according to instructions. Cut the chicken thights in cubes and set aside. Empty the seeds of the red paprika cut in small pieces and set aside as well.
2.
Pour the soy sauce in a pan and add rice vinegar and sake, then mix well. Add the sugar heat up and let reduce for five minutes until it’s thick then set aside.
3.
Heat the sesame oil in a frying pan and add meat and paprika, brush with above liquid. Decorate with sesame seeds and japanese fresh herbs.
4.
Losen up the Rösti and distribute around a cup in order to form a nest. Add the chicken and paprika in the middle of the nest and sprinkle with sesame seeds.

Cut green, red and yellow bell peppers in small cubes.
2.
Heat a non-sticking frying pan with some olive oil and stir-fry bell peppers for 3 to 4 minutes on medium heat.
3.
Loosen up the Rösti in the pack and add the raw Rösti to the frying pan with the bell peppers. Stir-fry for 3 to 4 minutes on medium heat.
4.
Pour the beaten eggs into the pan with the bell peppers and the Rösti and let cook on low to medium heat, until there is almost no runny egg on top. With a rubber spatula, carefully lift and loosen the sides of the omelet from time to time.
5.
Carefully flip over the pan over a plate and slide the omelet back into the pan.
6.
Let cook for another 2 to 3 minutes on low to medium heat.
7.
Serve on a plate.
